Pork cuts deriving from deboning a pig’s head, hand carving, salting and seasoning, boiling and then pressing.
It has a refined flavour for the high percentage of tongue and for its delicate seasoning.
It can be consumed in thin slices for a starter, or as a single dish with seasonal vegetables.
