Once a “humble” product, today it is prepared with chosen cuts of pork. The obtained mixture is all mixed with salt and spices.
Then all of it is stuffed in cheek rind and wrapped in film, suitable for cooking, then packed into elastic netting.
Available only raw in the approximate 0.8/0.900 format, it requires slow cooking in water, just as it is, then after removing the film it will be ready to eat in thin or thick slices, whichever you prefer.
