Typical of Campania, but basically spread over all of Italy, it has a mixture of pork, fat, garlic and a particular selection of flavourings and spices, among which the spicy chilli and the special “droga Napoli”, stand out.
It is recognised for its spicy flavour and the bright red colour of its slices.
